Description
These grilled chicken kabobs with pineapple are a perfect blend of sweet and savory, making them ideal for cookouts and family dinners.
Ingredients
- 1 pound chicken breast, cut into chunks
- 1 ripe pineapple, peeled and cut into cubes
- 1 bell pepper, chopped (any color)
- 1 red onion, chopped
- Olive oil
- Soy sauce
- Honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
Instructions
- Marinate the chicken: In a bowl, whisk together olive oil, soy sauce, honey, garlic, ginger, salt, and pepper. Add the chicken pieces, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 120 minutes or overnight for best results.
- Prepare skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Assemble: Thread the marinated chicken, pineapple, bell peppers, and onions onto the skewers, alternating ingredients for a colorful presentation.
- Grill: Preheat your grill to medium-high heat. Grill the skewers for about 10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve: Remove from the grill and allow to rest for a few minutes before serving. Enjoy with your favorite dipping sauce, if desired.
