Description

Ingredients

  • 1 pound chicken breast, cut into chunks
  • 1 ripe pineapple, peeled and cut into cubes
  • 1 bell pepper, chopped (any color)
  • 1 red onion, chopped
  • Olive oil
  • Soy sauce
  • Honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste


Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, soy sauce, honey, garlic, ginger, salt, and pepper. Add the chicken pieces, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 120 minutes or overnight for best results.
  2. Prepare skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  3. Assemble: Thread the marinated chicken, pineapple, bell peppers, and onions onto the skewers, alternating ingredients for a colorful presentation.
  4. Grill: Preheat your grill to medium-high heat. Grill the skewers for about 10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
