Description

Juicy grilled chicken enhanced with sweet and tangy pineapple, perfect for summer gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 ripe pineapple, peeled and sliced into rings
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • Fresh cilantro for garnish (optional)


Instructions

  1. Whisk together soy sauce, olive oil, minced garlic, honey, black pepper, and salt in a medium bowl.
  2. Add the chicken breasts to the marinade, ensuring they are thoroughly coated. Let marinate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat and lightly oil the grill grates to prevent sticking.
  4. Prepare the pineapple rings by brushing them lightly with olive oil.
  5. Remove the chicken from the marinade and place it on the grill. Grill for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).
  6. Add the pineapple rings to the grill in the last few minutes, cooking for about 2-3 minutes on each side, until slightly charred and caramelized.
  7. Remove the chicken and pineapple from the grill and let the chicken rest for a few minutes before slicing.
  8. Serve the grilled chicken topped with pineapple rings and garnish with fresh cilantro if desired.

Notes

For best flavor, marinate chicken for at least 30 minutes, but longer is better. Consider swapping chicken for tofu or shrimp for different options.
