Description
Delightful grilled seafood skewers featuring shrimp, scallops, and your favorite fish, perfect for summer gatherings.
Ingredients
- Shrimp (peeled and deveined)
- Scallops
- Your preferred fish fillets (like salmon or swordfish)
- Bell peppers (various colors)
- Red onion
- Zucchini
- Olive oil
- Lemon juice
- Garlic (minced)
- Fresh herbs (like parsley or dill)
- Salt and pepper
Instructions
- Combine olive oil, lemon juice, minced garlic, fresh herbs, salt, and pepper to create the marinade.
- Add the seafood to the marinade, ensuring everything is well coated. Let it marinate in the refrigerator for at least 15-30 minutes.
- Chop the vegetables into bite-sized pieces, making sure they can easily fit onto skewers.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Thread the seafood and vegetables onto the skewers, alternating to create a colorful presentation.
- Place the skewers on the grill. Cook for about 2-3 minutes on each side, until the seafood is opaque and cooked through, about 8-10 minutes in total.
- Remove skewers from the grill and let them rest for a couple of minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Avoid reheating in the microwave as it can overcook the seafood.
