Description

Ingredients

  • Shrimp (peeled and deveined)
  • Scallops
  • Your preferred fish fillets (like salmon or swordfish)
  • Bell peppers (various colors)
  • Red onion
  • Zucchini
  • Olive oil
  • Lemon juice
  • Garlic (minced)
  • Fresh herbs (like parsley or dill)
  • Salt and pepper


Instructions

  1. Combine olive oil, lemon juice, minced garlic, fresh herbs, salt, and pepper to create the marinade.
  2. Add the seafood to the marinade, ensuring everything is well coated. Let it marinate in the refrigerator for at least 15-30 minutes.
  3. Chop the vegetables into bite-sized pieces, making sure they can easily fit onto skewers.
  4. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  5. Thread the seafood and vegetables onto the skewers, alternating to create a colorful presentation.
  6. Place the skewers on the grill. Cook for about 2-3 minutes on each side, until the seafood is opaque and cooked through, about 8-10 minutes in total.
  7. Remove skewers from the grill and let them rest for a couple of minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Avoid reheating in the microwave as it can overcook the seafood.
