Description

A quick and delightful shrimp boil made in convenient foil packets, perfect for outdoor gatherings and easy cleanup.


Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 1 lb baby potatoes (halved)
  • 2 corn on the cob (cut into smaller pieces)
  • 1 bell pepper (sliced)
  • 1 red onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 2 tbsp Old Bay seasoning (or your favorite seafood seasoning)
  • 1 fresh lemon (sliced)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)


Instructions

  1. Prepare your ingredients: Start by washing and slicing your vegetables. Halve the baby potatoes, chop the corn, and thinly slice the bell peppers and red onion.
  2. Mix the seasoning: In a large bowl, combine shrimp, vegetables, minced garlic, olive oil, Old Bay seasoning, salt, and pepper. Toss until everything is well coated.
  3. Assemble the packets: Cut out large squares of aluminum foil. Divide the shrimp and vegetable mixture onto the center of each square, placing a few lemon slices on top before sealing the packets.
  4. Cook at medium heat: Preheat the grill over medium heat. Place the packets on the grill and cook for about 15-20 minutes, or until the shrimp are opaque and the vegetables are tender.
  5. Serve: Carefully open the packets to release steam. Garnish with fresh parsley and more lemon if desired, then enjoy!

Notes

For best results, use fresh shrimp. Add spice with red pepper flakes or hot sauce if desired.
