Description
A vibrant and nutritious bowl featuring grilled shrimp, zesty corn salsa, and a creamy sauce, perfect for light lunches or dinner parties.
Ingredients
- 1 lb shrimp (peeled and deveined)
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 2 tbsp lime juice
- 1 cup corn (fresh or frozen, thawed)
- 1 red onion (diced)
- 1 cup cherry tomatoes (halved)
- 1 avocado (diced)
- 1/4 cup fresh cilantro (chopped)
- Salt and pepper to taste
- Your favorite creamy sauce (store-bought or homemade)
Instructions
- Combine the shrimp with olive oil, minced garlic, and lime juice in a large bowl. Let it marinate for about 10 minutes while preparing the salsa.
- Mix corn, diced red onion, halved cherry tomatoes, diced avocado, and chopped cilantro in a separate bowl for the corn salsa. Season with salt and pepper.
- Preheat the grill over medium-high heat. Skewer the marinated shrimp (if using wooden skewers, soak them in water for 30 minutes beforehand). Grill the shrimp for 2-3 minutes per side until they turn pink and opaque.
- Assemble your bowls by starting with a base of the corn salsa and adding the grilled shrimp on top. Drizzle with creamy sauce before serving.
Notes
For extra flavor, consider adding spices like paprika or cumin to the shrimp marinade. Grilling ensures a nice sear; check shrimp doneness to avoid overcooking.
