Description

A delightful fusion of grilled shrimp, creamy avocado, and crunchy corn salsa, perfect for a fresh and satisfying meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup fresh corn (or frozen sweet corn)
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup Greek yogurt or sour cream (for creamy sauce)


Instructions

  1. Combine olive oil, garlic powder, paprika, salt, and pepper in a bowl. Add shrimp, tossing to coat. Let marinate for about 15 minutes.
  2. Prepare the corn salsa by mixing fresh corn, diced red onion, chopped cilantro, lime juice, and salt in a separate bowl.
  3. Preheat your grill or grill pan over medium-high heat. Grill the shrimp for about 2-3 minutes on each side, until pink and opaque.
  4. Whisk together the ingredients for the creamy sauce in a small bowl.
  5. Assemble your bowl starting with a base of quinoa or rice. Layer grilled shrimp, corn salsa, and diced avocado, then drizzle with creamy sauce.

Notes
