Description

Succulent shrimp and sweet, juicy pineapple skewers, perfect for summer barbecues.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 ripe pineapple, peeled and cut into chunks
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or agave syrup
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Skewers (soak wooden skewers in water for at least 30 minutes)


Instructions

  1. Whisk together olive oil, soy sauce, honey, minced garlic, lime juice, salt, and pepper to create the marinade.
  2. Add the shrimp to the marinade, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
  3. Prepare the pineapple chunks.
  4. Thread the shrimp and pineapple alternately onto the skewers.
  5. Preheat your grill to medium-high heat and lightly oil the grill grates.
  6. Place the skewers on the grill and cook for 3-4 minutes per side, or until the shrimp turn pink and opaque, and the pineapple has grill marks.
  7. Remove from the grill and let them rest briefly before serving.

Notes

Leftover skewers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the grill or in a skillet.
