Description
Succulent shrimp and sweet, juicy pineapple skewers, perfect for summer barbecues.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 ripe pineapple, peeled and cut into chunks
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey or agave syrup
- 2 cloves garlic, minced
- Juice of 1 lime
- Salt and pepper to taste
- Skewers (soak wooden skewers in water for at least 30 minutes)
Instructions
- Whisk together olive oil, soy sauce, honey, minced garlic, lime juice, salt, and pepper to create the marinade.
- Add the shrimp to the marinade, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
- Prepare the pineapple chunks.
- Thread the shrimp and pineapple alternately onto the skewers.
- Preheat your grill to medium-high heat and lightly oil the grill grates.
- Place the skewers on the grill and cook for 3-4 minutes per side, or until the shrimp turn pink and opaque, and the pineapple has grill marks.
- Remove from the grill and let them rest briefly before serving.
Notes
Leftover skewers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the grill or in a skillet.
