Description

A hearty bowl brimming with grilled steak and vibrant veggies, all tied together with a rich, creamy sauce.


Ingredients

  • 1 pound steak (flank or sirloin recommended)
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Fresh herbs (dill or parsley work beautifully)


Instructions

  1. Marinate the steak: Combine olive oil, salt, and pepper in a bowl. Rub this mixture over the steak and let sit for at least 15 minutes to absorb the flavors.
  2. Prepare the zucchini: Toss the sliced zucchini in a bit of olive oil, salt, and pepper, then set aside.
  3. Grill the steak: Preheat a grill or grill pan over medium-high heat. Cook the steak for 5-7 minutes on each side, or until it reaches your desired doneness. Let it rest for a few minutes before slicing.
  4. Grill the zucchini: Grill the zucchini for about 3-5 minutes, turning occasionally until lightly charred and tender.
  5. Make the creamy sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, garlic powder, and herbs until smooth.
  6. Assemble the bowl: In a bowl, layer the grilled steak and zucchini, then drizzle with the creamy sauce.
