Ingredients
- 1 lb steak (ribeye or flank)
- 2 tbsp olive oil (for marinade and drizzling)
- 2 tbsp soy sauce
- 2 cloves garlic (freshly minced)
- Juice of 1 lime (freshly squeezed)
- 1 bell pepper (sliced)
- 1 red onion (thinly sliced)
- 1 cup corn (grilled or canned)
- 1 can black beans (drained and rinsed)
- 2 cups greens (arugula, spinach, or mixed greens)
- 1 avocado (sliced)
- 1/4 cup fresh cilantro (chopped)
- Hot sauce or salsa (optional)
Instructions
- Marinate the steak: In a bowl, mix olive oil, soy sauce, minced garlic, and lime juice. Add the steak, ensuring it’s well-coated. Let it marinate for at least 30 minutes.
- Prepare the grill: Preheat your grill or grill pan over medium-high heat.
- Cook the steak: Grill the marinated steak for about 4-5 minutes per side or until it reaches your desired doneness. Let it rest for a few minutes before slicing.
- Grill the veggies: While the steak rests, toss the bell peppers and red onion with a bit of olive oil and grill them for about 3-4 minutes until softened and slightly charred.
- Assemble the bowl: In a large bowl, layer greens, followed by sliced steak, grilled veggies, corn, black beans, and avocado.
- Add toppings: Finish with fresh cilantro and a drizzle of hot sauce or salsa, if using. Enjoy immediately!
Notes
You can use chicken or grilled shrimp instead of steak if desired. For a Mediterranean twist, consider adding feta cheese or olives.
