Description

Tender and crispy grilled vegetables marinated in a flavorful blend, perfect for any meal.


Ingredients

  • Seasonal vegetables (bell peppers, zucchini, eggplant, cherry tomatoes)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar or lemon juice
  • 3 cloves garlic, minced
  • Fresh herbs (basil or oregano)
  • Salt and pepper to taste
  • Crushed red pepper (optional)


Instructions

  1. Prepare the marinade: Whisk together olive oil, balsamic vinegar (or lemon juice), minced garlic, herbs, salt, and pepper in a bowl.
  2. Chop your veggies: Cut your choice of vegetables into uniform pieces to ensure even cooking.
  3. Marinate: Toss the chopped veggies in the marinade until they are evenly coated. Let them sit for at least 10 minutes to absorb the flavors.
  4. Preheat the grill: Get your grill hot and ready, ideally at medium-high heat.
  5. Grill away: Place the marinated veggies directly on the grill or use a grilling basket. Cook for about 10-15 minutes, turning occasionally until they are tender and have nice grill marks.
  6. Serve and enjoy: Remove the veggies from the grill and serve hot, garnished with fresh herbs or a drizzle of olive oil.

Notes
