Grilled Zucchini with Garlic and Herbs

Description

A simple yet flavorful grilled zucchini dish, enhanced with garlic and herbs, perfect as a side or snack.


Ingredients

  • 2 medium zucchini, sliced into half-moons
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano (or substitute with fresh)
  • 1 teaspoon dried basil (fresh is excellent too)
  • Salt and pepper, to taste
  • Optional: Red pepper flakes for a kick


Instructions

  1. Combine the olive oil, minced garlic, oregano, basil, salt, and pepper in a large bowl. If you like some heat, sprinkle in red pepper flakes.
  2. Add the zucchini slices into the bowl and toss until they are well coated in the marinade.
  3. Let them marinate for at least 10 minutes, allowing the flavors to infuse.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Place the zucchini slices on the grill in a single layer once hot.
  6. Grill for about 4-5 minutes on each side, or until they are tender and have nice char marks.
  7. Remove from the grill and serve warm.

Notes

For best flavor, use fresh herbs. Adjust seasoning to taste. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
