Description

Ground beef and tender potatoes come together in this comforting and hearty meal that’s perfect for any gathering.

Ingredients

  • 1 pound ground beef
  • 2 cups diced potatoes (Yukon Gold or russets)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced potatoes, followed by the beef broth, paprika, salt, and pepper.
  4. Cover the skillet and let it simmer until the potatoes are fork-tender, approximately 20 minutes.
  5. Uncover, stir, and continue cooking for an additional 5 minutes to allow flavors to meld.

Notes

For a twist, substitute sweet potatoes or add bell peppers. Leftovers can be stored in the refrigerator for up to four days.
