Ingredients
- 1 pound ground beef
- 2 cups diced potatoes (Yukon Gold or russets)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the diced potatoes, followed by the beef broth, paprika, salt, and pepper.
- Cover the skillet and let it simmer until the potatoes are fork-tender, approximately 20 minutes.
- Uncover, stir, and continue cooking for an additional 5 minutes to allow flavors to meld.
Notes
For a twist, substitute sweet potatoes or add bell peppers. Leftovers can be stored in the refrigerator for up to four days.
