Description

A delightful fusion of sweet and savory, this Ground Beef Hot Honey Bowl features roasted sweet potatoes, ground beef, and creamy cottage cheese finished with a drizzle of hot honey.


Ingredients

  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread them out on a baking sheet and roast for 40-45 minutes, stirring halfway through.
  3. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
  4. Add the ground beef, sprinkle with taco seasoning, and cook until browned, breaking it apart as it cooks.
  5. In each bowl, layer the roasted sweet potatoes, cooked ground beef, sliced avocado, and a scoop of cottage cheese.
  6. Drizzle hot honey over the top, and garnish with cilantro, red pepper flakes, or a lime wedge if desired.

Notes

Feel free to substitute proteins or veggies based on your preferences. Leftovers can be stored separately in airtight containers for up to three days.
