Description

This quick and healthy ground beef salad is packed with bold taco flavors, fresh vegetables, and creamy avocado all ready in just 20 minutes. It’s perfect for busy weeknights, meal prep, or anyone looking for a high-protein, low-carb meal that’s both simple and satisfying.


Ingredients

For the Taco Ground Beef

  • 1 tablespoon olive oil
  • 1.5 lbs ground beef (85/15 or 90/10 lean)
  • 1 cup white onion, diced
  • ½ cup red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 tablespoon onion powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • 1 tablespoon dried oregano
  • ½ teaspoon cayenne pepper (optional)
  • Salt and ground black pepper, to taste
  • 1 cup chicken broth

For the Salsa

  • 2 medium tomatoes, diced
  • ¼ cup red onion, diced
  • 1 green bell pepper, diced
  • 1 teaspoon jalapeño, chopped (remove seeds for less heat)
  • Fresh cilantro, chopped (optional)
  • 1 tablespoon fresh lime juice
  • 1 small garlic clove, minced
  • Salt and pepper, to taste

For the Salad

  • 46 cups romaine lettuce, chopped
  • ½ avocado, sliced
  • Lime wedges, for garnish
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish


Instructions

  1. Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook for 6–8 minutes until browned. Drain excess fat if needed.
  2. Add Vegetables: Stir in diced onion, bell pepper, and minced garlic. Cook for 5 minutes until soft.
  3. Season: Add all spices paprika, cumin, chili powder, coriander, onion powder, oregano, cayenne, salt, and pepper. Stir well.
  4. Simmer: Pour in chicken broth. Reduce heat to low and simmer for 15–20 minutes, allowing flavors to blend.
  5. Make Salsa: In a bowl, combine tomatoes, red onion, green bell pepper, jalapeño, cilantro, lime juice, garlic, salt, and pepper. Mix and refrigerate until ready to serve.
  6. Assemble the Salad: Add lettuce to a large bowl, top with warm taco ground beef, fresh salsa, and avocado slices.
  7. Finish & Serve: Squeeze lime juice on top and garnish with cilantro. Serve immediately and enjoy!
