Description

A delightful BBQ chicken dish marinated in a sweet and tangy sauce that transports you to a tropical paradise with every bite.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Optional: sesame seeds and chopped green onions for garnish


Instructions

  1. Marinate the chicken: In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, apple cider vinegar, garlic, and ginger. Whisk until combined. Reserve a bit of the marinade for basting and place the chicken in the remaining marinade. Let it sit in the fridge for at least 30 minutes, or up to overnight.
  2. Preheat the grill: Get your grill ready by preheating it to medium-high heat, about 400°F (200°C). If using an oven, preheat to 375°F (190°C).
  3. Grill the chicken: Remove the chicken from the marinade and discard the used marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, basting with the reserved marinade halfway through. The chicken is ready when its internal temperature reaches 165°F (75°C).
  4. Rest and serve: Once cooked, let the chicken rest for a few minutes before slicing to help retain its juices.

Notes

For a twist, consider adding sriracha for heat or using coconut sugar instead of brown sugar.
