A delightful BBQ chicken dish marinated in a sweet and tangy sauce that transports you to a tropical paradise with every bite.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- ½ cup soy sauce
- ¼ cup brown sugar
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- Optional: sesame seeds and chopped green onions for garnish
Instructions
- Marinate the chicken: In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, apple cider vinegar, garlic, and ginger. Whisk until combined. Reserve a bit of the marinade for basting and place the chicken in the remaining marinade. Let it sit in the fridge for at least 30 minutes, or up to overnight.
- Preheat the grill: Get your grill ready by preheating it to medium-high heat, about 400°F (200°C). If using an oven, preheat to 375°F (190°C).
- Grill the chicken: Remove the chicken from the marinade and discard the used marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, basting with the reserved marinade halfway through. The chicken is ready when its internal temperature reaches 165°F (75°C).
- Rest and serve: Once cooked, let the chicken rest for a few minutes before slicing to help retain its juices.
Notes
For a twist, consider adding sriracha for heat or using coconut sugar instead of brown sugar.
