Description
Juicy chicken kabobs featuring sweet pineapple and vibrant vegetables, marinated for a flavorful punch and perfect for summer gatherings.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup pineapple chunks, fresh or canned (drained)
- 1 bell pepper, any color, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 3 tablespoons soy sauce
- 2 tablespoons honey or brown sugar
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Wooden or metal skewers (if using wooden, soak them in water for 30 minutes to prevent burning)
Instructions
- Whisk together the soy sauce, honey, olive oil, minced garlic, and ginger in a bowl.
- Add the chicken cubes to the marinade and let them soak for at least 15 minutes.
- Prepare your vegetables by cutting the bell pepper and onion into bite-sized pieces and set aside.
- Thread the chicken, pineapple, bell peppers, and onion onto skewers, alternating between ingredients.
- Preheat your grill to medium-high heat.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let them rest for a couple of minutes before serving.
Notes
For a twist, add zucchini or cherry tomatoes. Marinate chicken overnight for deeper flavors.
