Description

Juicy chicken kabobs featuring sweet pineapple and vibrant vegetables, marinated for a flavorful punch and perfect for summer gatherings.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup pineapple chunks, fresh or canned (drained)
  • 1 bell pepper, any color, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 3 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Wooden or metal skewers (if using wooden, soak them in water for 30 minutes to prevent burning)


Instructions

  1. Whisk together the soy sauce, honey, olive oil, minced garlic, and ginger in a bowl.
  2. Add the chicken cubes to the marinade and let them soak for at least 15 minutes.
  3. Prepare your vegetables by cutting the bell pepper and onion into bite-sized pieces and set aside.
  4. Thread the chicken, pineapple, bell peppers, and onion onto skewers, alternating between ingredients.
  5. Preheat your grill to medium-high heat.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let them rest for a couple of minutes before serving.

Notes

For a twist, add zucchini or cherry tomatoes. Marinate chicken overnight for deeper flavors.
