Juicy chicken grilled to perfection with a medley of colorful vegetables and a sweet Hawaiian-inspired glaze.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 bell peppers (any color), cut into chunks
- 1 onion, cut into wedges
- 1 zucchini, sliced
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Whisk together the soy sauce, pineapple juice, honey, and sesame oil in a medium bowl.
- Add the chicken pieces to the marinade, ensuring they’re well coated. Cover and refrigerate for at least 30 minutes.
- Prep the vegetables by cutting them into suitable sizes for skewering.
- Preheat the grill to medium-high heat.
- Assemble the kabobs by alternating chicken and vegetables on the skewers.
- Grill the kabobs for about 12-15 minutes, turning occasionally, until the chicken is fully cooked and juices run clear.
- Remove from grill and let rest for a few minutes before serving.
Notes
To prevent wooden skewers from burning, soak them in water for at least 30 minutes before grilling.
