Description

Juicy chicken grilled to perfection with a medley of colorful vegetables and a sweet Hawaiian-inspired glaze.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 bell peppers (any color), cut into chunks
  • 1 onion, cut into wedges
  • 1 zucchini, sliced
  • Salt and pepper to taste
  • Skewers (wooden or metal)


Instructions

  1. Whisk together the soy sauce, pineapple juice, honey, and sesame oil in a medium bowl.
  2. Add the chicken pieces to the marinade, ensuring they’re well coated. Cover and refrigerate for at least 30 minutes.
  3. Prep the vegetables by cutting them into suitable sizes for skewering.
  4. Preheat the grill to medium-high heat.
  5. Assemble the kabobs by alternating chicken and vegetables on the skewers.
  6. Grill the kabobs for about 12-15 minutes, turning occasionally, until the chicken is fully cooked and juices run clear.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

To prevent wooden skewers from burning, soak them in water for at least 30 minutes before grilling.
