Description

Juicy chicken thighs marinated in a sweet and savory Hawaiian-inspired sauce, grilled to perfection.

Ingredients

  • Bone-in, skin-on chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 4 garlic cloves, minced
  • 1 inch ginger, grated
  • 1/2 cup pineapple juice
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, garlic, ginger, and pineapple juice for the marinade.
  2. Add the chicken thighs to the marinade, ensuring they’re thoroughly coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade, letting excess marinade drip off. Discard the leftover marinade.
  5. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F.
  6. Once done, let the chicken rest for a few minutes before slicing.
  7. Garnish with chopped green onions and sesame seeds before serving.

Notes

For a lighter option, feel free to substitute skinless chicken breasts. For best flavor, marinate overnight if possible.
