Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups milk (any kind or plant-based alternative)
- 1/2 cup applesauce
- 1/4 cup maple syrup or honey
- 1 cup diced apples (peeled, if desired)
- Optional: chopped nuts or raisins
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, combine the oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together the milk, applesauce, and maple syrup.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the diced apples and stir gently.
- Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for 25–30 minutes, or until the tops are golden and a toothpick comes out clean.
