Description

A vibrant and nutritious pasta salad combining black beans, corn, and a refreshing creamy lime dressing. Perfect for gatherings and quick weeknight meals.


Ingredients

  • 8 ounces rotini pasta
  • 1 can black beans, drained and rinsed
  • 1 cup sweet corn (canned or frozen)
  • 2 cups fresh spinach
  • 1 cup Greek yogurt
  • 1/4 cup lime juice
  • Salt and pepper to taste


Instructions

  1. Boil the rotini pasta according to package instructions, then drain and allow it to cool.
  2. In a large bowl, mix together the black beans, sweet corn, and fresh spinach.
  3. In another bowl, whisk together the Greek yogurt, lime juice, salt, and pepper to create the dressing.
  4. Incorporate the cooled pasta into the bean and corn mixture and drizzle the dressing on top. Gently toss until evenly coated.
