Ingredients
- 8 ounces rotini pasta
- 1 can black beans, drained and rinsed
- 1 cup sweet corn (canned or frozen)
- 2 cups fresh spinach
- 1 cup Greek yogurt
- 1/4 cup lime juice
- Salt and pepper to taste
Instructions
- Boil the rotini pasta according to package instructions, then drain and allow it to cool.
- In a large bowl, mix together the black beans, sweet corn, and fresh spinach.
- In another bowl, whisk together the Greek yogurt, lime juice, salt, and pepper to create the dressing.
- Incorporate the cooled pasta into the bean and corn mixture and drizzle the dressing on top. Gently toss until evenly coated.
