Description

A flavorful and nutritious dish featuring Cajun seasoned chicken and creamy rice, perfect for busy weeknights or family dinners.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice (preferably jasmine or long grain)
  • 2 cups chicken broth
  • 1/2 cup light cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a medium-sized pot, heat olive oil over medium heat.
  2. Add the chopped onion, bell pepper, and minced garlic; sauté until softened, about 3-4 minutes.
  3. Toss in the diced chicken along with the Cajun seasoning, cooking until the chicken is browned on all sides.
  4. Stir the rice into the pot, followed by the chicken broth; bring the mixture to a boil.
  5. Lower the heat to a simmer, cover, and cook for about 18-20 minutes or until the rice has absorbed the liquid and is tender.
  6. Remove from heat and mix in the light cream cheese and Parmesan until they melt and blend smoothly.
  7. Add salt and pepper to taste. Serve hot and enjoy!

Notes

For a smokier flavor, add a dash of smoked paprika. Marinate the chicken in Cajun seasoning for an hour for deeper flavor.
