Ingredients
- 1 lb chicken breast, diced
- 1 cup rice (preferably jasmine or long grain)
- 2 cups chicken broth
- 1/2 cup light cream cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- In a medium-sized pot, heat olive oil over medium heat.
- Add the chopped onion, bell pepper, and minced garlic; sauté until softened, about 3-4 minutes.
- Toss in the diced chicken along with the Cajun seasoning, cooking until the chicken is browned on all sides.
- Stir the rice into the pot, followed by the chicken broth; bring the mixture to a boil.
- Lower the heat to a simmer, cover, and cook for about 18-20 minutes or until the rice has absorbed the liquid and is tender.
- Remove from heat and mix in the light cream cheese and Parmesan until they melt and blend smoothly.
- Add salt and pepper to taste. Serve hot and enjoy!
Notes
For a smokier flavor, add a dash of smoked paprika. Marinate the chicken in Cajun seasoning for an hour for deeper flavor.
