Description

A delightful wrap combining juicy chicken and creamy avocado, perfect for a nutritious meal.


Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 ripe avocado, mashed or sliced
  • 1 cup fresh spinach or mixed greens
  • ½ cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 4 whole wheat or spinach tortillas
  • Salt and pepper to taste
  • Optional: lime juice, shredded cheese, or your favorite sauce


Instructions

  1. In a skillet over medium heat, cook the chicken until golden brown. Remove from heat and shred it into bite-sized pieces.
  2. In a bowl, combine the mashed or sliced avocado with lime juice, salt, and pepper for added flavor.
  3. Lay out the tortillas and spread a generous layer of the avocado mixture on each.
  4. Distribute the shredded chicken, spinach, cherry tomatoes, and red onion across the tortillas.
  5. Fold the sides of each tortilla inwards, then roll tightly from the bottom up to secure all the fillings inside.
  6. Slice each wrap in half and enjoy!

Notes

These wraps are incredibly versatile and can be served with fresh fruit or a zesty dipping sauce. Store leftovers in an airtight container for up to 2 days.
