Ingredients
- 2 chicken breasts, cooked and shredded
- 1 ripe avocado, mashed or sliced
- 1 cup fresh spinach or mixed greens
- ½ cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 4 whole wheat or spinach tortillas
- Salt and pepper to taste
- Optional: lime juice, shredded cheese, or your favorite sauce
Instructions
- In a skillet over medium heat, cook the chicken until golden brown. Remove from heat and shred it into bite-sized pieces.
- In a bowl, combine the mashed or sliced avocado with lime juice, salt, and pepper for added flavor.
- Lay out the tortillas and spread a generous layer of the avocado mixture on each.
- Distribute the shredded chicken, spinach, cherry tomatoes, and red onion across the tortillas.
- Fold the sides of each tortilla inwards, then roll tightly from the bottom up to secure all the fillings inside.
- Slice each wrap in half and enjoy!
