A comforting casserole combining shredded chicken, brown rice, black beans, corn, and gooey cheese, perfect for family gatherings.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cooked brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup salsa
- 1 teaspoon taco seasoning
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1/2 cup chopped fresh cilantro for garnish
- Optional: sour cream for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, cooked rice, black beans, corn, salsa, and taco seasoning.
- Spread half of the chicken mixture evenly in a greased baking dish.
- Layer 1 cup of cheese over the chicken mixture.
- Top with the remaining chicken mixture and sprinkle with the rest of the cheese.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese has melted and is bubbly.
- Once out of the oven, let it rest for a few minutes before garnishing with cilantro. Serve with sour cream if desired.
Notes
For added flavor, consider incorporating diced bell peppers or onions. Experiment with different types of cheese for varied flavor.
