Description

A delightful one-pan meal featuring tender chicken, zesty tzatziki, and fluffy rice, bringing the flavors of the Mediterranean to your table.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain or basmati rice
  • 2 cups chicken broth
  • 1 cucumber, finely chopped
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill (or parsley, for topping)
  • Salt and pepper to taste
  • 2 tablespoons lemon juice


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, combine the rice with chicken broth, ensuring the rice is evenly distributed.
  3. Arrange the chicken breasts on top, seasoning them with salt, pepper, and dill.
  4. In a bowl, mix together the yogurt, cucumber, garlic, and lemon juice to create the tzatziki.
  5. Spoon the tzatziki mixture over the chicken, ensuring it’s well coated.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes, until the chicken is cooked through and the rice is tender.
  8. Fluff the rice with a fork and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for longer storage. For best flavor, sauté the rice in olive oil before adding broth.
