Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain or basmati rice
- 2 cups chicken broth
- 1 cucumber, finely chopped
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon fresh dill (or parsley, for topping)
- Salt and pepper to taste
- 2 tablespoons lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, combine the rice with chicken broth, ensuring the rice is evenly distributed.
- Arrange the chicken breasts on top, seasoning them with salt, pepper, and dill.
- In a bowl, mix together the yogurt, cucumber, garlic, and lemon juice to create the tzatziki.
- Spoon the tzatziki mixture over the chicken, ensuring it’s well coated.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, until the chicken is cooked through and the rice is tender.
- Fluff the rice with a fork and serve warm.
