Description

A simple yet flavorful one-pot meal combining tender chicken, fluffy rice, and zesty tzatziki, perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 ½ cups uncooked rice (preferably basmati or jasmine)
  • 3 cups chicken broth
  • 1 medium cucumber, grated
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • Salt to taste
  • Pepper to taste
  • Fresh dill or parsley for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, arrange the chicken.
  3. Sprinkle salt and pepper over the chicken as desired.
  4. Add the rice, broth, and olive oil around the chicken, mixing gently.
  5. Cover the dish tightly with foil and bake for 40 minutes.
  6. While it’s baking, combine the grated cucumber, yogurt, garlic, red wine vinegar, and a pinch of salt in a small bowl to create the tzatziki sauce.
  7. After 40 minutes, remove the foil and bake for an additional 10 minutes.
  8. Once done, let it rest for a few minutes before serving with tzatziki on top.

Notes

For added flavor, marinate the chicken in yogurt with spices beforehand, and ensure to squeeze out excess liquid from cucumber for a thick tzatziki.
