Description
A simple yet flavorful one-pot meal combining tender chicken, fluffy rice, and zesty tzatziki, perfect for busy weeknights.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- 1 ½ cups uncooked rice (preferably basmati or jasmine)
- 3 cups chicken broth
- 1 medium cucumber, grated
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- Salt to taste
- Pepper to taste
- Fresh dill or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, arrange the chicken.
- Sprinkle salt and pepper over the chicken as desired.
- Add the rice, broth, and olive oil around the chicken, mixing gently.
- Cover the dish tightly with foil and bake for 40 minutes.
- While it’s baking, combine the grated cucumber, yogurt, garlic, red wine vinegar, and a pinch of salt in a small bowl to create the tzatziki sauce.
- After 40 minutes, remove the foil and bake for an additional 10 minutes.
- Once done, let it rest for a few minutes before serving with tzatziki on top.
Notes
For added flavor, marinate the chicken in yogurt with spices beforehand, and ensure to squeeze out excess liquid from cucumber for a thick tzatziki.
