Ingredients
- Chicken breasts (or thighs)
- Rice (long-grain or basmati)
- Chicken broth
- Olive oil
- Garlic powder
- Dried dill
- Cucumber
- Greek yogurt
- Lemon juice
- Salt and pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, combine uncooked rice, chicken broth, olive oil, garlic powder, dried dill, salt, and pepper. Mix well.
- Place the chicken on top of the rice mixture, ensuring it’s evenly spread.
- Cover the dish with foil and bake for about 30 minutes.
- While the chicken is cooking, prepare the tzatziki by mixing diced cucumber, Greek yogurt, lemon juice, and a pinch of salt in a bowl.
- After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through.
- Serve the dish warm, drizzled with tzatziki.
Notes
For added flavor, marinate chicken in olive oil and spices before cooking. Customize with fish, shrimp, or extra vegetables as desired.
