Description

A delightful Mediterranean dish featuring tender chicken, aromatic spices, and creamy tzatziki served over rice.


Ingredients

  • Chicken breasts (or thighs)
  • Rice (long-grain or basmati)
  • Chicken broth
  • Olive oil
  • Garlic powder
  • Dried dill
  • Cucumber
  • Greek yogurt
  • Lemon juice
  • Salt and pepper


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, combine uncooked rice, chicken broth, olive oil, garlic powder, dried dill, salt, and pepper. Mix well.
  3. Place the chicken on top of the rice mixture, ensuring it’s evenly spread.
  4. Cover the dish with foil and bake for about 30 minutes.
  5. While the chicken is cooking, prepare the tzatziki by mixing diced cucumber, Greek yogurt, lemon juice, and a pinch of salt in a bowl.
  6. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through.
  7. Serve the dish warm, drizzled with tzatziki.

Notes

For added flavor, marinate chicken in olive oil and spices before cooking. Customize with fish, shrimp, or extra vegetables as desired.
