Ingredients
- 1 pound chicken breast, thinly sliced
- 2 medium zucchini, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced chicken and season with salt and pepper; cook until browned, about 5-7 minutes.
- Toss in the onion and bell pepper, sautéing for another 2-3 minutes.
- Stir in the garlic and zucchini, cooking until just tender, around 3-4 minutes.
- Pour the soy sauce over the mixture, stirring to coat everything evenly, and let it cook for an additional minute.
- Remove from heat and garnish with sesame seeds if desired.
Notes
For the best texture, cook the chicken in batches if your skillet is crowded. You can also experiment with different vegetables based on what you have on hand.
