Ingredients

- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cottage cheese and chickpeas, mixing gently to incorporate.
- Add the diced cucumber, bell pepper, and red onion.
- Squeeze in the lemon juice and season with salt and pepper.
- Fold in the chopped parsley or cilantro for freshness.
- Serve immediately or let it chill in the refrigerator for 30 minutes for flavors to meld.
