Description

A delightful salad combining cottage cheese and chickpeas, packed with nutrition and flavor. Perfect for a light lunch or as a side dish.


Ingredients

  • 1 cup cottage cheese
  • 1 cup canned chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1 bell pepper, diced (any color)
  • 1/4 red onion, finely chopped
  • Fresh parsley or cilantro, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the cottage cheese and chickpeas, mixing gently to incorporate.
  2. Add the diced cucumber, bell pepper, and red onion.
  3. Squeeze in the lemon juice and season with salt and pepper.
  4. Fold in the chopped parsley or cilantro for freshness.
  5. Serve immediately or let it chill in the refrigerator for 30 minutes for flavors to meld.
