Description

A hearty and comforting dish featuring tender beef chuck roast and flavorful potatoes, perfect for chilly evenings.


Ingredients

  • 3 pounds beef chuck roast
  • 4 large potatoes, diced
  • 1 cup beef broth
  • 1 stick unsalted butter
  • 6 cloves garlic, minced
  • Fresh herbs (thyme and rosemary)
  • Salt and pepper to taste


Instructions

  1. Season the beef with salt and pepper.
  2. In a large skillet, brown the beef on all sides for about 4-5 minutes per side.
  3. Place the diced potatoes in the bottom of the slow cooker.
  4. Transfer the browned beef on top of the potatoes.
  5. In the same skillet, melt the butter and sauté the minced garlic until fragrant.
  6. Pour the garlic butter over the beef and potatoes, then add the beef broth and fresh herbs.
  7. Cover and cook on low for 8 hours or high for 4 hours until the beef is fork-tender.

Notes

For a personal touch, substitute with your favorite root vegetables. Marinate the beef overnight for enhanced flavor.
