Ingredients
- 3 pounds beef chuck roast
- 4 large potatoes, diced
- 1 cup beef broth
- 1 stick unsalted butter
- 6 cloves garlic, minced
- Fresh herbs (thyme and rosemary)
- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper.
- In a large skillet, brown the beef on all sides for about 4-5 minutes per side.
- Place the diced potatoes in the bottom of the slow cooker.
- Transfer the browned beef on top of the potatoes.
- In the same skillet, melt the butter and sauté the minced garlic until fragrant.
- Pour the garlic butter over the beef and potatoes, then add the beef broth and fresh herbs.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is fork-tender.
Notes
For a personal touch, substitute with your favorite root vegetables. Marinate the beef overnight for enhanced flavor.
