Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- For the creamy garlic sauce:
- 1 cup Greek yogurt
- 3 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 tablespoon finely chopped fresh parsley
Instructions
- Begin by marinating the chicken. In a bowl, combine olive oil, salt, and pepper with the chicken breasts. Allow them to marinate for at least 15 minutes.
- While the chicken marinates, steam the broccoli florets until vibrant green and tender-crisp, about 4-5 minutes.
- For the sauce, whisk together the Greek yogurt, minced garlic, lemon juice, and parsley in a separate bowl until well-combined.
- Heat a grill pan or outdoor grill over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until cooked through and juices run clear.
- Let the chicken rest for a few minutes before slicing it into strips.
- Assemble the bowls by placing a generous amount of broccoli at the bottom, adding the sliced chicken, and drizzling with the creamy garlic sauce.
