Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the creamy garlic sauce:
  • 1 cup Greek yogurt
  • 3 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon finely chopped fresh parsley


Instructions

  1. Begin by marinating the chicken. In a bowl, combine olive oil, salt, and pepper with the chicken breasts. Allow them to marinate for at least 15 minutes.
  2. While the chicken marinates, steam the broccoli florets until vibrant green and tender-crisp, about 4-5 minutes.
  3. For the sauce, whisk together the Greek yogurt, minced garlic, lemon juice, and parsley in a separate bowl until well-combined.
  4. Heat a grill pan or outdoor grill over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until cooked through and juices run clear.
  5. Let the chicken rest for a few minutes before slicing it into strips.
  6. Assemble the bowls by placing a generous amount of broccoli at the bottom, adding the sliced chicken, and drizzling with the creamy garlic sauce.

Notes

Feel free to substitute Greek yogurt with a non-dairy yogurt for a dairy-free version.
