Ingredients

  • 1 lb ground beef
  • 1 can cream of mushroom soup (or cream of chicken)
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen mixed vegetables (like peas and carrots)
  • 1 package cornbread mix (follow the package instructions)
  • Salt and pepper, to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef, seasoning it with salt and pepper.
  3. Once cooked, drain any excess fat and mix in the cream of mushroom soup and sour cream.
  4. Stir in the frozen mixed vegetables until well combined.
  5. In a greased baking dish, spread the beef mixture evenly.
  6. Prepare the cornbread mix according to package instructions and pour it over the beef mixture, spreading it out evenly.
  7. Top with shredded cheese.
  8. Bake for 25-30 minutes until the cornbread is golden and the cheese is bubbling.
