Description

A refreshing salad combining tender chicken and nutty chickpeas, perfect for any occasion.


Ingredients

  • 2 cups cooked chicken, diced or shredded
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese (optional)
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine cooked chicken, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. If desired, sprinkle feta cheese on top before serving.
  5. Serve immediately or refrigerate for flavors to meld.

Notes

For added flavor, consider marinating the chicken beforehand. Store leftovers in an airtight container for up to three days.
