Description
A refreshing salad combining tender chicken and nutty chickpeas, perfect for any occasion.
Ingredients
- 2 cups cooked chicken, diced or shredded
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese (optional)
- Juice of 1 lemon
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked chicken, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
- Pour the dressing over the salad and toss gently to combine.
- If desired, sprinkle feta cheese on top before serving.
- Serve immediately or refrigerate for flavors to meld.
Notes
For added flavor, consider marinating the chicken beforehand. Store leftovers in an airtight container for up to three days.
