A delightful combination of sweet and savory flavors featuring marinated chicken topped with refreshing mango salsa.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, deseeded and minced
- 1/4 cup cilantro, chopped
- Additional lime juice to taste
Instructions
- Whisk together honey, lime juice, minced garlic, cumin, salt, and pepper in a bowl. Add chicken and coat well. Let marinate for at least 30 minutes.
- Preheat the grill to medium-high and lightly oil the grates.
- Remove chicken from marinade, letting excess drip off. Grill for about 6–7 minutes per side, until cooked through.
- Meanwhile, combine all salsa ingredients in a bowl. Toss gently and adjust seasoning as needed.
- Once chicken is done, let it rest for a few minutes before slicing.
- Serve chicken topped with fresh mango salsa.
Notes
For added flavor, consider grilling the chicken on a cedar plank. Let the chicken rest after cooking for juicier results. Fresh ingredients make all the difference.
