Description

A delightful combination of sweet and savory flavors featuring marinated chicken topped with refreshing mango salsa.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, deseeded and minced
  • 1/4 cup cilantro, chopped
  • Additional lime juice to taste


Instructions

  1. Whisk together honey, lime juice, minced garlic, cumin, salt, and pepper in a bowl. Add chicken and coat well. Let marinate for at least 30 minutes.
  2. Preheat the grill to medium-high and lightly oil the grates.
  3. Remove chicken from marinade, letting excess drip off. Grill for about 6–7 minutes per side, until cooked through.
  4. Meanwhile, combine all salsa ingredients in a bowl. Toss gently and adjust seasoning as needed.
  5. Once chicken is done, let it rest for a few minutes before slicing.
  6. Serve chicken topped with fresh mango salsa.

Notes

For added flavor, consider grilling the chicken on a cedar plank. Let the chicken rest after cooking for juicier results. Fresh ingredients make all the difference.
