Description

A delightful breakfast twist that combines peanut butter with ripe bananas, making it a nourishing and satisfying dish.


Ingredients

  • 2 cups rolled oats
  • 2 ripe bananas, mashed
  • ½ cup peanut butter (smooth or chunky)
  • 2 cups milk (or dairy-free alternative)
  • 3 tablespoons honey or maple syrup
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Optional add-ins: chocolate chips, nuts, or dried fruit


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the oats, baking powder, and salt.
  3. In another bowl, combine the mashed bananas with peanut butter, milk, honey, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until well combined. If you’re adding any extras like chocolate chips or nuts, fold them in now.
  5. Transfer the mixture to the prepared baking dish, smoothing the top with a spatula.
  6. Bake for 25-30 minutes until golden brown and set. A toothpick inserted in the center should come out clean.
  7. Allow it to cool for a few minutes before slicing and serving.

Notes

This dish is great for meal prep and can be stored in the fridge for up to a week. For longer preservation, freeze individual portions.
