Description

This delightful casserole combines tender chicken with vibrant salsa verde, creating a wholesome meal packed with flavor.


Ingredients

  • 2 cups cooked, shredded chicken (rotisserie works great)
  • 1 cup salsa verde
  • 1 cup cooked rice (brown or white, your choice)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or pepper jack)
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded chicken, salsa verde, rice, black beans, corn, cumin, chili powder, salt, and pepper. Mix until well combined.
  3. Transfer the mixture into a greased 9×13-inch baking dish.
  4. Top with shredded cheese, spreading it evenly.
  5. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
  6. Once out of the oven, let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.

Notes

This casserole is delicious on its own, but it can be elevated with a fresh green salad or tortilla chips on the side. For an added crunch, consider serving it with a dollop of guacamole or a side of sour cream.
