Ingredients
- 2 cups cooked, shredded chicken (rotisserie works great)
- 1 cup salsa verde
- 1 cup cooked rice (brown or white, your choice)
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or pepper jack)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine shredded chicken, salsa verde, rice, black beans, corn, cumin, chili powder, salt, and pepper. Mix until well combined.
- Transfer the mixture into a greased 9×13-inch baking dish.
- Top with shredded cheese, spreading it evenly.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
- Once out of the oven, let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.
