Description

A comforting slow-cooked soup that balances flavor and nutrition, perfect for family gatherings or weeknight dinners.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 4 medium potatoes, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. In a skillet, brown the Italian sausage over medium heat, then drain off any excess fat.
  2. Transfer the cooked sausage to your slow cooker and add the chopped onion, minced garlic, chicken broth, and diced potatoes.
  3. Set your slow cooker to low and cook for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender.
  4. About half an hour before serving, stir in the chopped kale and heavy cream.
  5. Season with salt, pepper, and red pepper flakes to taste before serving.

Notes

Garnish with freshly grated Parmesan cheese or crispy bacon bits for added texture. Serve with warm breadsticks or a salad.
