Description

A refreshing salad featuring grilled corn, creamy Greek yogurt, and bold spices, perfect for gatherings or a quick lunch.


Ingredients

  • Fresh corn on the cob
  • Greek yogurt
  • Lime juice
  • Cotija cheese (optional)
  • Fresh cilantro or parsley
  • Chili powder or spice blend
  • Olive oil
  • Salt
  • Pepper


Instructions

  1. Preheat your grill or oven.
  2. Grill the corn until slightly charred or roast in the oven.
  3. Let the corn cool before cutting the kernels off the cob.
  4. Combine Greek yogurt, lime juice, olive oil, chili powder, salt, and pepper in a large bowl to make the dressing.
  5. Add the corn kernels to the dressing and mix well.
  6. If using, sprinkle in crumbled cotija cheese and chopped herbs.
  7. Stir to combine and adjust seasoning to taste before serving.

Notes
