Ingredients
- 1 pound ground turkey

- 1 bell pepper, diced

- 1 can black beans, rinsed and drained

- 2 cups cooked brown rice or quinoa
- Fresh cilantro, chopped
- Avocado, diced
- Salsa or pico de gallo

Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the chopped onion and bell pepper, sautéing until soft.
- Stir in the ground turkey, breaking it apart, and cook until browned and no longer pink.
- Sprinkle taco seasoning over the turkey, mixing well.
- Fold in the black beans and corn, cooking for an additional 3-5 minutes until heated through.
