A simple and nutritious dish featuring bell peppers filled with a hearty mixture of ground beef, rice, and spices, all cooked together for a comforting meal.
Ingredients
- 4 medium bell peppers (any color)
- 1 lb ground beef
- 1 cup cooked rice (or quinoa for a healthier twist)
- 1 can diced tomatoes (with juice)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil, for sautéing
- Shredded cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, add a drizzle of olive oil. Sauté the onions until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the ground beef, breaking it up with a spatula, and cook until browned. Season with salt, pepper, and Italian seasoning.
- Mix in the cooked rice and diced tomatoes, allowing everything to warm through together for 5-7 minutes.
- Stuff the mixture into each bell pepper and place them in a baking dish.
- If using, sprinkle cheese on top before covering the dish with foil.
- Bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to let the cheese melt and brown slightly.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Can also be frozen for longer storage.
