Description

A comforting and nourishing bean soup perfect for chilly days, easy to prepare and satisfying for the whole family.


Ingredients

  • 2 cups dried beans (such as navy, pinto, or black beans)
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth or water
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. The night before, soak the dried beans in plenty of water. Then, drain and rinse them before cooking.
  2. In a large pot, heat a splash of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until softened, approximately 5-7 minutes.
  3. Stir in the minced garlic and cook for an extra minute.
  4. Add the soaked beans to the pot along with the vegetable broth (or water), dried thyme, bay leaf, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for about 60 to 90 minutes, or until the beans are tender.
  6. Before serving, remove the bay leaf and taste. Adjust the seasoning as necessary.

Notes

For a creamier texture, blend a portion of the soup before serving. Pairs well with crusty bread and fresh herbs.
