Description
A comforting and nourishing bean soup perfect for chilly days, easy to prepare and satisfying for the whole family.
Ingredients
- 2 cups dried beans (such as navy, pinto, or black beans)
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth or water
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- The night before, soak the dried beans in plenty of water. Then, drain and rinse them before cooking.
- In a large pot, heat a splash of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until softened, approximately 5-7 minutes.
- Stir in the minced garlic and cook for an extra minute.
- Add the soaked beans to the pot along with the vegetable broth (or water), dried thyme, bay leaf, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 60 to 90 minutes, or until the beans are tender.
- Before serving, remove the bay leaf and taste. Adjust the seasoning as necessary.
Notes
For a creamier texture, blend a portion of the soup before serving. Pairs well with crusty bread and fresh herbs.
