Description

A hearty and flavorful Black-Eyed Pea Chili that’s easy to make and perfect for gatherings or cozy evenings at home.


Ingredients

  • 2 cups frozen black-eyed peas
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and bell pepper. Sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the frozen black-eyed peas, diced tomatoes, vegetable broth, chili powder, cumin, and season with salt and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, until the peas are tender.
  6. Serve hot and enjoy!

Notes

For a thicker chili, mash some black-eyed peas against the pot. Experiment with spices for added flavor.
