A hearty and flavorful Black-Eyed Pea Chili that’s easy to make and perfect for gatherings or cozy evenings at home.
Ingredients
- 2 cups frozen black-eyed peas
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the frozen black-eyed peas, diced tomatoes, vegetable broth, chili powder, cumin, and season with salt and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, until the peas are tender.
- Serve hot and enjoy!
Notes
For a thicker chili, mash some black-eyed peas against the pot. Experiment with spices for added flavor.
