A hearty breakfast lasagna layered with ground beef, ricotta, and mozzarella that’s perfect for weekend brunches.
Ingredients
- 9 lasagna noodles (no-boil for convenience)
- 1 pound ground beef
- 2 cups ricotta cheese
- 4 large eggs
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup spinach (chopped, fresh or frozen)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat, seasoning with salt, pepper, and garlic powder.
- In a bowl, mix ricotta cheese with eggs, adding a pinch of salt and pepper. Stir in chopped spinach.
- Layer the lasagna: Spread a thin layer of beef on the bottom of a baking dish, followed by noodles, ricotta mixture, and mozzarella. Repeat layers, ending with noodles topped with mozzarella and Parmesan.
- Bake in the oven for about 40 minutes, or until the cheese is bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
Garnish with fresh herbs or a dollop of hot sauce. Pairs well with fruit salad or avocado slices. Can be prepared ahead of time.
