Description

A hearty breakfast lasagna layered with ground beef, ricotta, and mozzarella that’s perfect for weekend brunches.


Ingredients

  • 9 lasagna noodles (no-boil for convenience)
  • 1 pound ground beef
  • 2 cups ricotta cheese
  • 4 large eggs
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup spinach (chopped, fresh or frozen)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat, seasoning with salt, pepper, and garlic powder.
  3. In a bowl, mix ricotta cheese with eggs, adding a pinch of salt and pepper. Stir in chopped spinach.
  4. Layer the lasagna: Spread a thin layer of beef on the bottom of a baking dish, followed by noodles, ricotta mixture, and mozzarella. Repeat layers, ending with noodles topped with mozzarella and Parmesan.
  5. Bake in the oven for about 40 minutes, or until the cheese is bubbly and golden.
  6. Let it cool for 10 minutes before slicing and serving.

Notes

Garnish with fresh herbs or a dollop of hot sauce. Pairs well with fruit salad or avocado slices. Can be prepared ahead of time.
