Ingredients
- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 ½ cups biscuit mix (like Bisquick)
- 1 cup water
- Cooking spray (like Pam)
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 ½ cups shredded Cheddar cheese (Fiesta blend), divided
- 1 teaspoon garlic powder
- ½ cup mild salsa
Instructions
- Preheat your oven to 350℉ (175℃).
- In a skillet, cook the ground beef over medium-high heat until no longer pink, then drain excess fat.
- In a mixing bowl, combine biscuit mix and water; knead until mixed. Spray casserole dish with cooking spray and spread dough in the base. Bake for 5-8 minutes until lightly golden.
- Add chopped onions and red bell pepper to the skillet with the beef and cook for about 4 minutes until soft. Stir in taco seasoning.
- Spread the cooked ground beef mixture over the biscuit base.
- In another bowl, mix sour cream, mayonnaise, green chiles, ¾ cup cheese, and garlic powder, and spread over the beef layer.
- Dollop salsa on top and sprinkle with remaining cheese.
- Bake uncovered for 30 minutes until heated through and bubbling.
