Description

A hearty casserole loaded with savory ground beef, tangy sour cream, and topped with a cheesy biscuit crust, perfect for busy weeknight dinners or festive brunches.


Ingredients

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2 ½ cups biscuit mix (like Bisquick)
  • 1 cup water
  • Cooking spray (like Pam)
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1 ½ cups shredded Cheddar cheese (Fiesta blend), divided
  • 1 teaspoon garlic powder
  • ½ cup mild salsa


Instructions

  1. Preheat your oven to 350℉ (175℃).
  2. In a skillet, cook the ground beef over medium-high heat until no longer pink, then drain excess fat.
  3. In a mixing bowl, combine biscuit mix and water; knead until mixed. Spray casserole dish with cooking spray and spread dough in the base. Bake for 5-8 minutes until lightly golden.
  4. Add chopped onions and red bell pepper to the skillet with the beef and cook for about 4 minutes until soft. Stir in taco seasoning.
  5. Spread the cooked ground beef mixture over the biscuit base.
  6. In another bowl, mix sour cream, mayonnaise, green chiles, ¾ cup cheese, and garlic powder, and spread over the beef layer.
  7. Dollop salsa on top and sprinkle with remaining cheese.
  8. Bake uncovered for 30 minutes until heated through and bubbling.

Notes

For healthier options, use ground turkey or low-fat dairy. Serve alongside a salad or cornbread for an enhanced meal experience.
