Description

A hearty and flavorful casserole made with sausage, beans, and vegetables, perfect for weeknight dinners or family gatherings.


Ingredients

  • 1 pound sausage (Italian or kielbasa)
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 2 cups of diced tomatoes (canned or fresh)
  • 1 cup of corn (frozen or fresh)
  • 1 cup of black beans, drained and rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1 tablespoon olive oil


Instructions

  1. In a skillet, brown the sausage over medium heat for about 5-7 minutes. Drain any excess fat.
  2. Transfer the sausage to a crockpot. Add onion, bell peppers, diced tomatoes, corn, black beans, garlic powder, paprika, salt, and pepper.
  3. Give it a good stir to combine all ingredients.
  4. Cook on low for 6-8 hours or high for 3-4 hours, allowing the flavors to meld beautifully.
  5. If using cheese, sprinkle it on top for the last 15 minutes of cooking to let it melt.
  6. Serve hot and enjoy!

Notes

Browning the sausage adds depth of flavor. Feel free to swap out sausage for plant-based alternatives for a vegetarian version.
