A hearty and flavorful casserole made with sausage, beans, and vegetables, perfect for weeknight dinners or family gatherings.
Ingredients
- 1 pound sausage (Italian or kielbasa)
- 1 onion, chopped
- 2 bell peppers, chopped
- 2 cups of diced tomatoes (canned or fresh)
- 1 cup of corn (frozen or fresh)
- 1 cup of black beans, drained and rinsed
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1 tablespoon olive oil
Instructions
- In a skillet, brown the sausage over medium heat for about 5-7 minutes. Drain any excess fat.
- Transfer the sausage to a crockpot. Add onion, bell peppers, diced tomatoes, corn, black beans, garlic powder, paprika, salt, and pepper.
- Give it a good stir to combine all ingredients.
- Cook on low for 6-8 hours or high for 3-4 hours, allowing the flavors to meld beautifully.
- If using cheese, sprinkle it on top for the last 15 minutes of cooking to let it melt.
- Serve hot and enjoy!
Notes
Browning the sausage adds depth of flavor. Feel free to swap out sausage for plant-based alternatives for a vegetarian version.
