Description

A comforting casserole that combines layers of beef, rice, and vegetables, delivering a satisfying meal perfect for any gathering.


Ingredients

  • 1 pound ground beef
  • 1 cup cooked rice (white or brown)
  • 1 can cream of mushroom soup
  • 1 cup cheddar cheese, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Olive oil for sautéing
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic until translucent.
  3. Add the ground beef to the skillet, cooking until browned. Drain excess fat.
  4. In a large mixing bowl, combine the cooked rice, cream of mushroom soup, sautéed beef, vegetables, and half of the cheese. Mix well and season with salt and pepper.
  5. Transfer the mixture to a greased baking dish, spreading it evenly and topping with the remaining cheese.
  6. Bake in the preheated oven for 30-40 minutes, or until bubbly and golden on top.
  7. Let it cool slightly before serving to allow the layers to set.

Notes

For added flavor, consider browning the beef with spices or adding sour cream for a creamier texture.
