Ingredients
- 1 pound ground beef
- 1 cup cooked rice (white or brown)
- 1 can cream of mushroom soup
- 1 cup cheddar cheese, shredded
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 medium onion, diced
- 2 cloves garlic, minced
- Olive oil for sautéing
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic until translucent.
- Add the ground beef to the skillet, cooking until browned. Drain excess fat.
- In a large mixing bowl, combine the cooked rice, cream of mushroom soup, sautéed beef, vegetables, and half of the cheese. Mix well and season with salt and pepper.
- Transfer the mixture to a greased baking dish, spreading it evenly and topping with the remaining cheese.
- Bake in the preheated oven for 30-40 minutes, or until bubbly and golden on top.
- Let it cool slightly before serving to allow the layers to set.
