Description

A comforting soup featuring kielbasa, creamy potatoes, and vibrant vegetables—perfect for chilly nights.


Ingredients

  • 1 tbsp olive oil
  • 1 lb kielbasa sausage, sliced
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, peeled and sliced into half-moons
  • 5 medium waxy potatoes, peeled and cut into bite-sized pieces
  • 1 tsp sweet paprika
  • 1 tsp dried marjoram
  • 1 can (14 oz) white beans, drained and rinsed
  • 5 cups chicken broth
  • ½ cup cream cheese, softened
  • ½ tsp black pepper
  • 2 tbsp fresh dill, chopped


Instructions

  1. Prepare all your ingredients: slice the kielbasa, peel and chop the potatoes and carrots, dice the onion, crush the garlic, and chop the dill.
  2. Warm the olive oil in a large pot over medium heat. Sauté the kielbasa slices until browned, about 5 minutes, then remove from the pot and set aside.
  3. Add the diced onion, minced garlic, and sliced carrots to the same pot. Sauté for about 3 minutes until softened.
  4. Introduce the potatoes, white beans, paprika, and marjoram into the pot. Pour in the chicken broth, stir well, and cover. Bring to a boil, then reduce heat to medium-low and let it simmer for 15 minutes.
  5. Once the potatoes are tender, stir in the softened cream cheese until mixed thoroughly. Return the browned kielbasa to the pot.
  6. Taste and adjust seasoning as needed, finishing with freshly cracked black pepper and a sprinkle of dill before serving.

Notes

For added depth, consider adding a splash of white wine before introducing the broth. Feel free to experiment with vegetables or substitute turkey kielbasa for a lighter option.
