Description

A rich and creamy Loaded Potato Soup that’s perfect for chilly evenings and casual gatherings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cooked crispy bacon bits (optional)


Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they’re translucent.
  2. Toss in the diced potatoes and pour in the broth. Bring the mixture to a boil before reducing it to a simmer. Cook for about 15-20 minutes until the potatoes are fork-tender.
  3. Use a potato masher or immersion blender to puree the soup to your desired texture. If you prefer a chunkier soup, just blend part of it.
  4. Stir in the heavy cream and shredded cheddar cheese, mixing until the cheese is fully melted and incorporated.
  5. Season with salt and pepper to taste, adjusting according to your preference.
  6. Serve hot, garnished with chopped green onions and crispy bacon bits if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or oat milk.
