A rich and creamy Loaded Potato Soup that’s perfect for chilly evenings and casual gatherings.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped green onions for garnish
- Cooked crispy bacon bits (optional)
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they’re translucent.
- Toss in the diced potatoes and pour in the broth. Bring the mixture to a boil before reducing it to a simmer. Cook for about 15-20 minutes until the potatoes are fork-tender.
- Use a potato masher or immersion blender to puree the soup to your desired texture. If you prefer a chunkier soup, just blend part of it.
- Stir in the heavy cream and shredded cheddar cheese, mixing until the cheese is fully melted and incorporated.
- Season with salt and pepper to taste, adjusting according to your preference.
- Serve hot, garnished with chopped green onions and crispy bacon bits if desired.
Notes
For a lighter version, substitute heavy cream with half-and-half or oat milk.
