Description

A hearty and comforting slow-cooker casserole featuring ground beef, potatoes, kidney beans, and cheese – perfect for family gatherings and weeknight dinners.


Ingredients

  • 1 pound ground beef
  • 4 cups potatoes, chopped
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheese (for topping, optional)
  • Sour cream (for garnish, optional)
  • Chopped chives (for garnish, optional)


Instructions

  1. In a skillet over medium-high heat, brown the ground beef, breaking it apart until no pink remains. Drain excess fat.
  2. Stir in garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined.
  3. Lightly grease a large (6-quart or larger) slow cooker and transfer the seasoned beef to the bottom.
  4. Layer the chopped potatoes, kidney beans, and corn on top of the beef.
  5. Pour the tomato sauce over everything.
  6. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the potatoes are fork-tender.
  7. About 30 minutes before serving, sprinkle shredded cheese over the top and cover to let it melt.
  8. Once done, let the casserole rest for 10-15 minutes.
  9. Ladle into bowls, and garnish with sour cream and chives if desired. Serve warm and enjoy!

Notes

For a spicier version, add diced green chiles or chili powder. This casserole can also be made vegetarian by substituting the ground beef with a plant-based meat option.
