A hearty and comforting slow-cooker casserole featuring ground beef, potatoes, kidney beans, and cheese – perfect for family gatherings and weeknight dinners.
Ingredients
- 1 pound ground beef
- 4 cups potatoes, chopped
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (15-ounce) can tomato sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheese (for topping, optional)
- Sour cream (for garnish, optional)
- Chopped chives (for garnish, optional)
Instructions
- In a skillet over medium-high heat, brown the ground beef, breaking it apart until no pink remains. Drain excess fat.
- Stir in garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined.
- Lightly grease a large (6-quart or larger) slow cooker and transfer the seasoned beef to the bottom.
- Layer the chopped potatoes, kidney beans, and corn on top of the beef.
- Pour the tomato sauce over everything.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the potatoes are fork-tender.
- About 30 minutes before serving, sprinkle shredded cheese over the top and cover to let it melt.
- Once done, let the casserole rest for 10-15 minutes.
- Ladle into bowls, and garnish with sour cream and chives if desired. Serve warm and enjoy!
Notes
For a spicier version, add diced green chiles or chili powder. This casserole can also be made vegetarian by substituting the ground beef with a plant-based meat option.
