Ingredients
- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup beef broth
- 2 cups frozen diced potatoes
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Shredded cheese for topping (optional)
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Transfer the beef to the slow cooker. Add all remaining ingredients except for the cheese.
- Stir to combine well. Close the lid and set the cooker to low for 6 hours.
- Once cooked, stir well and top with shredded cheese if desired. Let it melt for a few minutes before serving.
Notes
Consider adding garlic or hot sauce for enhanced flavor. Adjust beef broth for desired consistency.
