Description

A comforting one-pot casserole combining ground beef, beans, corn, and vegetables, perfect for chilly evenings.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup beef broth
  • 2 cups frozen diced potatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Shredded cheese for topping (optional)


Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Transfer the beef to the slow cooker. Add all remaining ingredients except for the cheese.
  3. Stir to combine well. Close the lid and set the cooker to low for 6 hours.
  4. Once cooked, stir well and top with shredded cheese if desired. Let it melt for a few minutes before serving.

Notes

Consider adding garlic or hot sauce for enhanced flavor. Adjust beef broth for desired consistency.
