Ingredients

  • 4 large eggs
  • 1 cup black beans, drained and rinsed
  • 1 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/2 avocado, sliced
  • 4 whole wheat tortillas
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Salsa (for serving)


Instructions

  1. In a skillet, scramble the eggs over medium heat until fully cooked. Season with salt and pepper.
  2. Take a tortilla and layer the scrambled eggs, black beans, diced bell peppers, chopped spinach, and sliced avocado.
  3. If desired, sprinkle shredded cheese over the top.
  4. Roll up each tortilla, folding in the edges to secure the filling.
  5. Heat a pan over medium heat, placing the burritos seam-side down. Toast for about 2-3 minutes on each side until golden brown and crispy.
  6. Serve with salsa on the side.

Notes
